From questions of “food-miles” to the great Organic Debate, and beyond, food preparation and consumption are becoming global concerns. How to maintain top level quality, at a reasonable price, in an ethical way, is one of most important questions currently facing the restaurant industry.
Talking us through these questions tonight is Tom Aikens, indisputedly one of the most exciting young chefs in the UK. At 26, Tom became the youngest chef ever to receive a second Michelin Star. He has just opened his second restaurant Tom’s Kitchen, and his cookbook has just been published by Ebury.
